Beef and vegetables simmered with Thai flavors!
Please note that this recipe is flavored with curry paste, which can be very spicy depending on the brand used, so be careful not to add too much if you prefer a milder dish.

Rice

Preparation time: 120 min

Set up
Cut the onion, tomatoes, beef, and potatoes into cubes (2-3 cm).
Remove the cilantro leaves from the stems.
Lightly crush the peanuts.

Beef
Heat the casserole dish, add the Massaman curry paste and sweat for 1–2 minutes to release the aromas.
Add the beef, coat well, and brown lightly for 3–4 minutes.
Add the coconut milk, broth, bay leaf, and cinnamon. Cover and simmer for 45 minutes over low heat.
Add the potatoes and onion, then cook for 25–30 minutes.
Add the tomatoes, palm sugar, fish sauce, and lime juice, then cook for 10 minutes.

Rice
To cook in a saucepan, bring the water to a boil before adding the rice, reduce the heat, cover, and cook for 15 minutes on low heat. Then turn off the heat and let stand covered for 5 minutes.

On the plate
Arrange the rice in the center of your plates, then add the beef curry.
Sprinkle the plates with cilantro leaves and crushed peanuts.
