Preheat your oven at 425 °F

Set up
Prepare 12 smoked salmon roses by rolling the slices on themselves.
Pick and chop the thyme.
Finely chop the chives.
Grate the cheese.

Rösti
Place flour in a bowl. Add the potatoes, herbs, cheese, salt and pepper. Mix well and add the water before mixing one last time. You can use a clean cloth or a potato masher to make the job easier.
Cook small heaps in a hot, oiled frying pan, 1 or 2 minutes per side.
Finish cooking the röstis in the oven for 10 minutes and leave to cool slightly before garnishing.

On the plate
Place the röstis on a large plate and spoon a little sour cream over each, adding a smoked salmon rose and a pinch of chives.
