You can replace the Sherry vinegar with balsamic vinegar.
Ingredients
Recipe for 12 TapasBBQ Sauce
300 Gr
Tomato
25 Gr
Sugar
20 Gr
Xérès vinegar
1 Tsp
Montreal steak spice
25 Gr
Ketchup
75 Gr
French shallot
1 Clove(s)
Garlic
1 Tsp
Worcestershire sauce
1 Drop(s)
Liquid smoke

Preheat your Oven at 500 °F

BBQ sauce
Make a smoking pouch by taking a sheet of aluminum foil and placing wood chips inside.
Preheat your BBQ on maximum heat. Place the smoking pouch and wait for it to start smoking.
Smoke the tomatoes, onion and garlic for roughly 10-15 minutes.
Combine all of the ingredients in a sauce pot and cook on medium heat for roughly 30 minutes. Transfer to a blender and blend until smooth. Season to taste with salt and pepper.
You can replace the Sherry vinegar with balsamic vinegar.
