A traditional French pastry cream, served with seasonal fruit.
Choose from the list of seasonal fruits.
Make sure the pastry cream has boiled for at least one minute before stirring in the butter. You can flavor your pastry cream however you like.

For the custard
In a saucepan, heat the milk.
In a bowl, beat the egg yolks with the sugar until pale, then add the cornstarch and mix it in as well. Pour the hot milk into the bowl while whisking rapidly, then return the mixture to the saucepan and cook until thickened, whisking constantly.
Remove from the heat and add the butter. Place the pastry cream on a baking sheet lined with plastic wrap and refrigerate until cool.
Transfer to a pastry bag to assemble your fruit tarts.
