Unsweetened grated coconut
75 Gr
Brown sugar
1 Zest
Lime

Cinnamon

Vanilla extract

Almond extract

Génoise

Preparation time: 60 min

Preheat your oven at 355 °F

  • Coconut jam

    In a small saucepan, add the sugar, coconut and enough water to cover.

    Add the vanilla, cinnamon, almond extract and lime zest, then simmer everything for 1 hour over low heat.

    Let stand before using.

  • Génoise

    Sift the flour with the cinnamon.

    Whisk the egg with the sugar until the mixture becomes frothy.

    Fold in the flour mixture by folding with a spatula.

  • Place the coconut jam at the bottom of your tarts and cover with a spoon of the sponge cake mix.

    Place the tarts in the oven for 15 to 20 minutes and let cool before serving.
