Traditional gingerbread with honey and lemon - virtual workshop version
Gingerbread as it is prepared in Provence.

Things to do before the workshop
Make sure all your ingredients are weighed.
You will need : 1 cutting board, 1 chef knife, 1 pairing knife, 1 big bowl, 1 rubber spatula, 1 baking sheet, 1 cake mould, 1 parchment paper, 1 grater.

Preparation to do with the chef
In a saucepan, boil the water, sugar, salt and honey. Then add the 4 spice mixture, star anise and lemon zest.
Add the butter and let it melt. Cover the pan and let steep for 5 minutes, then remove the star anise.
Combine the flour and baking powder, stirring with a whisk, then add the liquid to obtain a homogeneous mixture.
Pour the preparation into a cake mold lined with baking paper and bake for 40 minutes before leaving to cool on a rack.
