Cut the banana into slices.

In your bowl, whisk the egg and sugar until the mixture doubles in volume.
Add the rum, then finish mixing by adding the almond powder and the flour.

Arrange the pieces of fruit at the bottom of your baking dish and sprinkle with a drizzle of honey.
Pour the almond cream over, then sprinkle with the grated coconut.
Bake for 12-13 minutes and serve still warm.
