Preheat your at 375 °F

  • To prepare before class

    Ingredients :

    Make sure all of your ingredients are out and weighed.

    Drain the pineapple pieces.

    You will need :

    1 mixing bowl + 1 whisk

    1 cake pan or 2 oven-safe ramekins

    1 spatula 

    1 cutting board + 1 paring knife

  • Preparation to do with the chef

    Cut the banana into slices.

  • Almond cream


    In your bowl, whisk the egg and sugar until the mixture doubles in volume.

    Add the rum, then finish mixing by adding the almond powder and the flour.

  • Cooking process

    Arrange the pieces of fruit at the bottom of your baking dish and sprinkle with a drizzle of honey.

    Pour the almond cream over, then sprinkle with the grated coconut.

    Bake for 12-13 minutes and serve still warm.
