- Almond cream
In the bowl of your stand mixer, combine the sugar and butter to blanch it. Add the eggs one at a time. Once homogenous and the eggs are fully absorbed, add the dry ingredients and continue to mix until smooth. Add the rum at the end.
Make sure that the butter is soft and not melted. The texture will not work well if the butter has been melted.
Most recipes call for cooking the almond cream in some form.
