Vanilla flavored rice pudding, topped with ice cream and fresh black cracked pepper.

For the rice pudding
For the creme anglaise
Preparation time: 45 min
Preheat your Four Vapeur at 212 °F
- For the rice pudding
In a bowl, put all the ingredients and the scraped vanilla bean, mix it well, place it on a baking tray.
Put it in the steam oven for 30 minutes on 212°F (100°C).
Out of the steam oven, put the rice on a cold baking tray to stop the cooking.
Place it in the fridge.
- For the creme anglaise
Warm the milk in a pot with a little bit of sugar. In a bowl, mix the egg yolks and the sugar until the mixture whitens. Add the hot milk gently by whisking constantly, put it back in the pot on the stove, cook it on low heat with a wood spoon until it cover your wood spoon, add the gelatine. Put it in a cold bowl and cool it down in the fridge.
- Whipped cream
Whipp the cream in the mixer until ferm and refrigerate.
- The plattingWhen the 3 preparations are cold :Place the rice in a bowl, add the creme anglaise gently, and the whipped cream.Place the rice in the bottom of a bowl, top it with the vanilla ice cream and finish with fresh black crack Pepper.
