Grilled pear puff pastry, vanilla ice cream, salted butter caramel
Stuffed puff pastry with caramelized pears, cooked on the BBQ or in the oven, served with a scoop of vanilla ice cream and topped with salted butter caramel.

Preheat your BBQ at 400 °F

Preparation
Cut the pears into cubes. With the help of a ring mold cut the puff pastry into circles. Whisk the eggs and milk together.

Pear puff pastry
In a hot skillet, melt the butter and then cook down the pears, add the sugar and then caramelize them and then set aside.
Brush the puff pastry with the egg and milk mixture. Place a tablespoon in the center of each circle and then seal them shut making a half moon. Brush the tops of the pastries with the egg and milk mixture and then transfer to the fridge or freezer for 30 minutes. Cook on the grill or in the oven for roughly 20 minutes or until you get a nice golden color.

Salted butter caramel
In a sauce pot, cook the sugar until it takes on a nice golden color. Add the butter and stir. Add the warm cream and whisk well then bring to a boil. Ideally, pass through a fine mesh sieve.
