For the pesto

  • For the preparations
    Dice in small cubes, the carrot, the celery, the zucchini, the potatoes and the empty tomatoes.Rince the chick peas, and the two sorts of beans.In the robot, realize the pesto with all the ingredients until smooth.In a big pot of salty boiling water, cook the pastina until tender, strain and refresh.
  • For the minestrone
    In a big pot put all the vegetables, cover with the stock, bring it to boil for 5 minutes, slow the heat and cook it on slow heat for 60 minutes.Add the tomato paste and the pastina, season it.Serve in bowls and top it with the pesto and a drizzle of olive ol.
