Potatoes salad, generousely garnish with red ognions, parsley, and a spicy mustard vinaigrette.

For the salad

Charlotte potatoes

Garlic

For the vinaigrette

60 Ml
Dijon mustard
60 Ml
Maille xérès vinegar
120 Ml
Vegetable oil

Preparation time: 45 min

  • For the salad
    In a big pot, put the potatoes and cover it with cold water, bring it to boil and let it cook for 30 minutes, check the cooking with the top of your knife.Strain it and let it cool down.Dice the onions finely and chop the parsley.In a bowl, wisk the mustard and the vinegar, season it. Montez it by adding the ol gently.Add the onions and the parsley, peel the potatoes and slice it in the vinaigrette, mix it well and let it seat in the fridge for 10 minutes.
