For the soup
Green hot chili
Peeled medium shrimps

Preparation time: 50 min
- For the preparationsClean and chop the lemon grass. In a pot, bring the stock to boil with the chili and the lemon grass, let it infuse for 15 minutes.Cut the carrots in thine stripes, mince the mushrooms hat, dice the celery.Chop the cilantro.
- For the soupStrain the stock, put it back on the stove on medium heat, add the carrots, the celery and the mushrooms and let it cook for 10 minutes more.At the mean time, in a big pot bring some salty water to boil, cook the chineese noodles for 3 minutes, strain it and add in the stock, with the shrimps, the spinach and the lime juice.Serve really hot and top it with the cilantro.
