Mixed salad that perfectly combines the bitterness of the endive and blue cheese and the sweetness of the pear and maple syrup.
You can use a blue brie type of cheese in order to realize nice blue cheese slices to lay on top of your salad.

General preparation
Roast the walnuts a few minutes in the oven or in a skillet over medium heat. Finely slice the endive. Finely chop the shallot. Finely chop the chives. Crumble the cheese. Cut the pears into thin slices just before serving the salad.

Maple dressing preparation
Mix the white balsamic vinegar with the maple syrup and olive oil in small bowl. Mix gently with the baby spinach, shallot and endive at the last moment. Season with salt and pepper.

To serve
Place some salad at the bottom of your plate and garnish it with walnuts, blue cheese and pears.
