Pineapple skewers confit with orange juice caramel, banana smoothie and grilled pistachio

Pineapple skewers coated with a nice orange juice caramel, with a thick banana smoothie garnished with grilled pistachio.

For the skewers

Orange juice

For the smoothie

Banana
100 Gr
Plain yogurt 10%
50 Ml
Vanilla extract
50 Gr
Sugar

Preparation time: 30 min

  • For the platting

    In a bowl, place two spoons of smoothie, two skewers on the top and garnish with the roasted pistachio.

  • For the smoothie

    Put the banana, the sugar, the vanilla and the yogurt in the blender. Smooth it with the orange juice slowly, you should keep a thick consistency, we don't want it to be too liquid.

  • For the skewers

    In a pan, melt the sugar to get a light caramel, add the skewers and caramelize them then deglaze with the orange juice.  Make sure you have a thick consistency and really coat the skewers. Keep warm on very low.

  • For the preparation

    Peel and cut the pineapple in 4 pieces lengthwise, then cut the quarters in half, to get 8 pieces. Stick the skewers in one side of the pieces to get a lollypop. Crush the pistachios and roast them in the oven for 4 minutes. Peel and cut the bananas in pieces.

You could switch the fruits for the skewers or for the smoothie.
