Salmon and tuna

Thin slices of Atlantic salmon marinated in with a maple, sesame and rice vinegar dressing and served with a julienne of apples and thinly sliced green onions.

Note

The fish used for sashimi must be very fresh and odor free.

For the salmon sashimi

Salmon filet skin-off
15 Ml
Sesame seeds
15 Ml
Roasted sesame oil
15 Ml
Maple syrup
15 Ml
Rice vinegar
30 Ml
Vegetable oil

  • Salt and pepper

Preparation time: 15 min

  • General preparation

    Cut the apple into julienne. Chop green onion. Toast the sesame seeds. Using a sharp knife, slice the salmon into thin slices.

  • Maple dressing preparation

    In a small bowl, combine maple syrup, rice vinegar, sesame oil, vegetable oil and a pinch of salt. Whisk well.

  • To serve

    Lay the salmon slices in a fan at the bottom of a plate. Sprinkle with julienned apple and green onion. Finally, season to taste with a drizzle of maple vinaigrette. You can serve the sashimi with a small green salad.
