Ingredients

Cocktail
In a shaker, pour all the ingredients out, except the bubbles.
Use a muddler to crush this mix.
Add ice and shake well for 8 to 10 seconds.
Pour the totality of your shaker into a wine glass.
Top with the rosé Ruffino Prosecco.
Stirr gentely with a mixing spoon.

Mandarin syrup
Prepare the mandarins: Wash the mandarins thoroughly. Finely grate the zest from the mandarins, without reaching the white part (which is bitter). Then squeeze the mandarins to extract the juice.
Heat the mixture: In a saucepan, combine the water, sugar, mandarin peel and mandarin juice. Heat over low heat, stirring gently, until the sugar has completely dissolved. Bring to the boil, then simmer for 10-15 minutes over medium heat.
Filter and bottle: Remove the pan from the heat and allow to cool slightly. Strain the syrup through a fine sieve or clean cloth to remove zest and other residues. Pour the syrup into a clean, airtight bottle. -
