Set up
Peel and dice the mango.
In a non-stick frying pan, brown the peanuts with the powdered sugar, then roll the peanuts in the pan.
As soon as the powdered sugar coats the peanuts, they start to caramelize, but watch out for discoloration. Stop cooking and leave them to cool on a sheet of baking paper. Crush them with the flat of the blade of your chef's knife.

Pudding
In a saucepan, start by boiling the water with the sugar and agar-agar. Add the soy milk and bring to the boil again.
Pour the mixture into your bowls and chill completely before serving.

On the plate
Place the diced mango on top of the pudding and drizzle with the cane sugar syrup.
Finish assembling the plates by adding the caramelized peanuts.
