Exotic fruits salad, with a caramel crisp
Exotic fruits mix prepared as a salad, flavored with orange blossom water, topped with a butterscotch crunchy puffed rice.

- For the platting
On each plate, put the cookies cutter in the middle, the crisp at the bottom and build the tartare on the top, break some pieces of crisp on the top and some juice around.
- For the crisp
In a sauce pan, put the sugar and melt it until you get a caramel, add the butter and stir it. Put the Rice Crispies in a bowl, pour the caramel on the top and mix it. Spread the mix on a baking tray and let it cool down, cut it with cookies cutter.
- For the tartare
In a big bowl, put all the fruits together, add the lemon juice and the orange blossom water and mix it gently. Add the honey and mix it again, reserve it.
- For the preparations
Cut the pineapple, the mango, the apple, the kiwis and the bananas in small dices. Squeeze the lemon and strain the juice.
