Tequila
Tequila is a Mexican spirit made exclusively from blue agave (Agave tequilana Weber). Produced mainly in the state of Jalisco and a few surrounding regions, it is characterized by a cleaner, often softer and more approachable aromatic profile compared to mezcal. Its categories – Blanco, Reposado, Añejo, and Extra Añejo – reflect the length of time it spends aging in oak barrels.

Mezcal
Mezcal, also Mexican, is more artisanal and more diverse. It can be produced from dozens of different agave varieties, giving it a much broader aromatic range. Its distinctive process, in which the agave hearts are cooked in underground stone ovens, often imparts a signature smoky character. Flavor profiles range from herbal and earthy notes to more complex aromas of fruits, spices, and smoke.
