A mini burger made from Quebec turkey.  Juicy, full of flavour, the perfect addition to any BBQ party.

Mayonnaise

Dijon mustard

Preparation time: 45 min

Preheat your Four at 400 °F

  • Preparation

    Mince the garlic and parsley.  Slice the french shallots.

    Remove the flesh from the avocados and make small cubes from the tomato flesh.

    Finely slice the lettuce.

  • Burger

    The  burger :

    In a mixing bowl, combine the meat, 2/3 of the garlic, the french shallot, the minced parsley, the egg, the ricotta, the celery salt and some fresh hot peppers if you feel up to it!

    Season with salt and pepper, combine thoroughly and make patties roughly 50g each.

    In a hot skillet with oil, sear the patties on each side for 1 minute and then transfer to a baking sheet and finish cooking for 4-6 minutes or until cooked through.

    The guacamole :

    In a mixing bowl, combine the avocado, tomato, vinegar, salt, pepper, the remaining garlic and olive oil.  Using a fork, combine until you reach the desired consistency.  Season with salt and pepper to taste.

  • Mayonnaise

    In a mixing bowl, combine the egg yolk, mustard and smoked paprika.  Whisk in the oil gradually and once you reach the desired consistency, add the lemon juice and season to taste with salt.

  • Plating

    On the top half of each bun, spread the mayonnaise.  On the bottom half place a nice helping of guacamole.  Place the cooked patties on the bottom buns, garnish with the cheese and the reheat this half in the oven to warm through.  Garnish with salad and add the top just before serving.

    Season the remaining salad with salt, pepper, olive oil and the vinegar of your choice.

You can always swap out the minced turkey for the burger meat of your choice.  Just be careful as the cooking time will probably need to be adjusted.
