Caramelized tofu in maple syrup, roasted sesame nougatine, vanilla ice cream

A beautiful maple caramelized tofu dessert, garnished with a roasted sesame nougatine and topped with a vanilla ice cream.


Recipe for 4 persons

For the caramelized tofu

Maple syrup

For the sesame nougatine

140 Gr
Icing sugar
50 Gr
Sesame seeds
35 Gr
Wheat flour
50 Ml
40 Gr
Melted butter

For the finition

1 Cello
Micro mesclun

Preparation time: 45 min

Preheat your four at 415 °F

  • For the caramelized tofu

    Cut the tofu in 10 mm cubes, in a hot pan with butter, cook the tofu until you reach a nice coloration then add the sugar and the cinnamon.

    When the sugar is caramelized, deglaze with the maple syrup, reduce a little bit and reserve.

  • For the sesame nougatine

    Roast the sesame seeds in the oven until golden. Melt the butter then add the water and put it in a bowl.  Once cooled add the rest of the ingredients. Make little balls with the dough and place them on a baking tray with a parchment paper then cook them in the oven at 425°F for about 6 minutes.

  • For the platting

    In a bowl, put a nice quenelle of vanilla ice cream, a little bit of fresh cracked black pepper.

    Top it with the caramelized tofu and finish with some nougatine and sprouts.
